I had a great 4 mile run this afternoon on a trail by my in-law’s house. I love when I go for a run and it is easy and peaceful. Hopefully the marathon will be that way 🙂 Cali decided to skip the run and do a little of this:
I was craving scallops for dinner tonight, even though I just had them on Monday at Craft. I bought some scallops from Whole Foods (all scallops sold at Whole Foods do not contain sodium tripolyphosphate – a yucky chemical added to a lot of seafood to retain moisture) and made an organic corn, tomato, and green bean salad to go with them. On the side we enjoyed a little risotto. It was a yummy meal, and there are lots of leftovers for my husband to take to work tomorrow. I’m not much of a leftover fan, but thank goodness he loves them!
I’m trying to mentally prepare for my 14 mile run on Saturday. It will be the farthest I have EVER run. I’m a little anxious about it – hopefully it will be as easy as my short run today! Hope everyone is having a great week!
Dinner looks fabulous girl! Scallops look awesome, good to hear that WF has some chemical-free options (didn’t know that?) — are they fresh or frozen?
Thanks! The scallops I bought were previously frozen, but they also had a never been frozen option. They were very yummy!
