Blueberry Chia Muffins

Happy Friday!  Last night for dinner I decided to make breakfast.  I knew I wanted to make a smoked salmon frittata but couldn’t decide what to have with it.  I found a recipe for blueberry chia muffins and thought that sounded perfect!  And not only were they delicious, but super healthy as well!  I highly recommend trying them.

  • 1 1/2 cups whole wheat pastry flour
  • 1/4 cup ground flax seed
  • 1 tbsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup sugar
  • 1 tbsp. chia seeds mixed with 3 tbsp. water
  • 1/2 cup unsweetened apple sauce
  • 1 tsp. vanilla extract
  • 2/3 cup nondairy milk
  • 1 cup blueberries

Preheat oven to 350.  Combine chia seeds and water until a gel like substance forms.  Combine dry ingredients in a large bowl.  In a seperate bowl, combine wet ingredients.  Add wet ingredients to dry ingredients.  Fold in blueberries.  Pour batter into lined muffin tins.  Bake for 15 minutes.  Enjoy!
